Chef Jim Noble’s Southern restaurant, with French, Italian and Spanish influences, is focused on local ingredients. From breads to cured meats, Executive Chef Joe Kindred prepares nearly everything in-house. Fresh vegetables, true to Chef Noble’s roots, are front and center. Brussels sprouts in the spring, tomatoes throughout the summer, and peas in the fall are all sourced from local farmers and vary based on availability.
